Super Easy 4 Ingredient Strawberry Ice Cream
This is the easiest strawberry ice cream you’ll ever make!
The older I get, the more conscious I am of what I'm putting into and in my body. That goes from body products right down to food. As much as possible, I try to make stuff at home to reduce the amount of additives we consume. I hope my older self will thank me for it!
Anyway, it's summer, and the heatwave has everyone begging for mercy. This weather calls for a nice, chilly ice cream, and making your own ice cream with just 4 ingredients instead of the long list on the supermarket ice cream tub is a no brainer! This is soooo easy, you'll want to make it every single day!
Ingredients
Ice cream base:
300ml full fat whipping cream
200g condensed milk
Strawberry compote:
125g fresh and ripe strawberries, sliced
1 tablespoon Lemon juice
Method
In a saucepan over medium heat, add in your 125g of strawberries. Stir gently and frequently until it becomes a compote (jammy). You may smash it with a spoon as it cooks (roughly 15-20 minutes).
Turn off the heat and add in your lemon juice to loosen up the mixture.
Allow it to cool completely before using it in the ice cream. You may wish to blend it before adding it to the ice cream, to reduce the lumps.
In a large bowl, whip 300ml of your cream until stiff peaks form.
Add in the condensed milk and mix well
Add in the strawberry compote and mix until well combined.
Pour your ice cream into a freezer-safe container, cover it, and freeze for 6 hours or more before serving.
